I think is the first time I’ve tried cooking a sweet potato for myself, and it turned out really well. A lot of that is how well it goes with cooking chicken breasts:
Sweet Potato: ~50 minutes at 425 F
Chicken Breast: ~15 minutes at 425 F (wrapped in foil with bay leafs, salt, pepper, however you want to prep it).
Just stick the chicken in I also managed to make broccoli in the same pan, so a VERY big plus in less dishes to do afterward. I probably found my quick go-to meal if I’m not feeling like working for food.
